Chicken Tikka Masala

Tender marinated chicken in a rich, creamy tomato-spiced sauce. Serve with basmati rice or naan.
Ingredients
700g boneless chicken thighs, 1 cup yogurt, 2 tbsp tikka masala spice mix, 2 tbsp oil, 1 large onion (diced), 4 cloves garlic, 1-inch ginger (grated), 400g canned tomatoes, 1 cup heavy cream, 1 tsp cumin, 1 tsp garam masala, fresh cilantro
Instructions
1. Marinate chicken in yogurt and tikka masala spice for at least 2 hours (overnight is better). 2. Grill or broil chicken until slightly charred. Cut into chunks. 3. In a large pot heat oil, sauté onion until golden. Add garlic and ginger; cook 2 min. 4. Add tomatoes, cumin and garam masala. Simmer 15 min. 5. Blend sauce until smooth. Return to pot, add cream and chicken. 6. Simmer 10 min. Garnish with cilantro.
