Quick and colorful shrimp stir-fry with fresh vegetables in a savory ginger-garlic sauce.
Ingredients
500g large shrimp (peeled, deveined), 1 red bell pepper (sliced), 1 cup broccoli florets, 1 cup snap peas, 3 cloves garlic (minced), 1-inch ginger (grated), 3 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, 1 tbsp cornstarch, 2 tbsp vegetable oil, cooked rice to serve
Instructions
1. Mix soy sauce, oyster sauce, sesame oil and cornstarch for sauce. 2. Heat oil in a wok over high heat. Stir-fry shrimp 2 min until pink; remove. 3. Add garlic and ginger; stir 30 sec. Add vegetables and stir-fry 3-4 min until tender-crisp. 4. Return shrimp to wok, pour sauce over; toss until coated and sauce thickens (1 min). 5. Serve over rice.
