Moist, rich banana bread with a hint of vanilla — the perfect use for overripe bananas.
Ingredients
3 ripe bananas (mashed), 1/3 cup melted butter, 3/4 cup sugar, 1 egg (beaten), 1 tsp vanilla extract, 1 tsp baking soda, pinch of salt, 1 1/2 cups all-purpose flour, 1/2 cup chopped walnuts (optional)
Instructions
1. Preheat oven to 175°C (350°F). Butter a 9x5-inch loaf pan. 2. Mash bananas with melted butter. Stir in sugar, egg and vanilla. 3. Mix in baking soda and salt. Fold in flour until just combined. Stir in walnuts if using. 4. Pour into loaf pan. Bake 55-65 min until a toothpick inserted in center comes out clean. 5. Cool in pan 10 min, then turn out onto a rack.
